About this cut
Striploin sits along the back of the animal and runs firmer and beefier than ribeye, with a defined fat cap along one edge. Lip off means the sinewy side strip is removed. It is the classic steakhouse cut: tight grain, clean bite, more chew and more beef flavour.
Marbling: Wagyu MB 4-5
Marble score 4-5 is the balance point of the Wagyu scale: clearly marbled and noticeably richer than Angus, but still substantial enough to eat as a full steak portion. This is the grade most steak lovers settle on once they have tried the range.
How to cook it
- Rest at room temperature for 20-30 minutes, then pat dry and salt just before cooking.
- Start fat-cap down in the pan for 60-90 seconds to render that edge, then lay it flat.
- Sear 3 minutes per side for a 2.5cm steak, basting with the rendered fat.
- Pull at 52-54°C for medium rare. Striploin firms up quickly past medium.
- Rest 5 minutes, then slice against the grain.
Best for: Pan searing, grilling, reverse sear for thick cuts.

Storage and handling
Delivered chilled and vacuum-sealed. Keep at 0-4°C and cook within 3-5 days of delivery, or freeze it on arrival and use within three months.

How do I know when it is done without a thermometer?
Buy a thermometer - it is the single best AED 50 you will spend on steak. Until then: rare feels like the base of your thumb relaxed, medium rare gives slight resistance, medium springs back.
